You can either continue the original campaign or start a game plus (the video shows a new game plus). Play the Bruce Wayne scenario and after the you receive the Batsuit you’re able to switch to another costume by exiting the game via the start menu. Then continue the game you just exited and you’ll be able to choose your unlocked costume before you start. This is the only way I’ve done it.
